Pupusa Pizza (Its Gluten Free Pizza)

I stink at lunch. I just do. My kids always do sandwiches for their lunch but I am gluten free and lazy. So I am really bad about actually getting up and making myself something. That makes for a crazy lady who waits until she is starving, then eats all the junk food in the house… Not good. So when I got a care package from Del Real Foods, I decided it was time to conquer lunch! 

WP_20160429_12_20_55_ProThis is a super easy dish that is tasty and gluten free. I wanted to create something with items I just had on hand and needed no real prep! The base of this recipe is a Cheese and Bell Pepper Pupusa. I know, you don’t know what a pupusa is ;). It is like a cheese filled corn tortilla. I looked at it as a cheese crust for a little personal pizza! 
So lets get into this!

Ingredients:

1 Del Real Pupusa (these are fully cooked)
1 tablespoon precooked Del Real shredded chicken 
1 1/2 tablespoon shredded mozzarella (I like cheese;)
3 artichoke hearts (mine were thawed from frozen)
Optional: pizza sauce (I didn’t use it)
Process

Preheat your oven to 420 degrees. Put your pupusa on a baking sheet. Spread on the pupusa 1/2 tablespoon of mozzarella, then artichoke hearts, then chicken, and then remaining cheese. Cook for 15 minutes until everything is golden brown and delicious! The inside of the pupusa will be all gooey too! 

Eat and enjoy! It doesn’t get any easier than that! It would make a great lunch or dinner and you can customize it to each person!!! Yum!

The #MacysProm Tour Comes to Concord

It is prom season!!! Every year Prom season comes around and with it comes new fashion trends. But Macy’s wanted me to let you know that they have your back! Macy’s Presents:Prom 2016! They will be showing you the best Prom dresses and accessories that are in this yeas. This is a series of events at a variety of Macy’s locations all over the country including (and especially) Concord Sunvalley location!

On Saturday, April 9, 2016 at 2pm at the Concord Sunvalley Macy’s will be the Clackamas Prom fashion show and shopping party. There will be a great fashion show with everything you need to make a great prom look. But there will be more!

My new everything! Yoga 900 by Lenovo

 

I just realized this week that I never posted my video about my new Lenovo Yoga 900! Lenovo sent me this computer as a bit of an early Christmas present and it rocks. This is a mighty little machine! It is a convertible laptop like the previous Yogas. I think at this point a convertible laptop is a necessity.

The tablet is great as a standard tablet. But the Yoga 900 in tablet mode is even better because of the WriteIt app. I can write directly into standard computer programs. It is really awesome for jotting down note, writing pieces, and tweeting on the go.

Not only is the Yoga 900 gorgeous and travels well but it is my everything machine. I am even typing this on my 2nd monitor I have hooked up to it. It is a workhorse with lots of RAM and a great SSD. I have been using it now for a few months and highly recommend it to all.

3 Ways to Help Your Kids to Move on From Their Toys!

Toys, toys, toys. They just keep coming! But the kids do eventually outgrow some of them. But if your kids are like mine, when parents suggest getting rid of the more childish ones kids say no! If you aren’t careful you will have a house full of teenagers and a full toy kitchen set too;). So I was asked by a friend, “How can we help our kids to move on from the toys they are really to old for?” I have 3 ways!

1) Leverage your space to make your argument. Don’t allow them to add their newer toys to reachable shelves that are already full of toys! Place the new toys in an inconvenient location (top shelf, another room, even somewhere they need your help to get). When the kids need your help or complain about the location, remind them if they get rid of their excess, old toys there will be plenty of room!

2) Tug on their hearts. The situation where you have some toys that your kids have outgrown but just don’t want to let go yet. But then you have a friend or family member with a younger child who would just adore that toy. You mention that so and so would love that toy. It is amazing to watch your kids just automatically volunteer it! Or at least grudgingly give their permission for the transfer;). This is a great way to not only get rid of old toys but to also grow your children’s hearts. 

My children have been on both sides of this situation. We have received great sets of toys that we would have never been able to afford! Like entire Little Tikes outdoor play structures. But when it was time for my kids to give them up… well they didn’t want to. But a friend of mine hosts a bible study for parents of preschoolers and didn’t have any outdoor toys. As soon as I asked if they would give them to this friend so this group of little kids could use them, all my children’s doubt and desire to hold on to them went away. My kids even volunteered to help take the structures apart so they could get loaded into a truck. 

3) If worse comes to worse, appeal to their greed. What can I say, economy and money are motivators. If they sell their toys, they will have money to spend! You can have a yard sale, use Craig’s List, or post them on one of the many Facebook groups that there are for community sales! Just remember that they toys don’t just belong to the first kid or the last kid who has played with them. You need to decide who gets a share of the money before things are sold. Otherwise you could have a lot of bickering and tension once everything is sold.
