Looks Aren’t Everything

Looks gorgeous, doesn’t it? It didn’t taste gorgeous. I finally got around to trying The Elephant Bar a few months ago. It was so disappointing! I got the soup and split lettuce wraps with a friend and something was missing from both. That something was seasoning. Salt and pepper would have been a good start but I would have hoped for some developed flavors. If you are giving me “world cuisine”, I expect world spices! Maybe this was an off night but I have heard this is the norm. Elephant Bar, I welcome that you try and change my mind!

Tax Edition of Meal Plan Monday

Ok, the only thing that is going to make this a Tax Day Meal Plan is the date it is being set for. If this were really a Tax Day plan we would do nothing but eat cardboard and bitter tears;).

Monday: hamburgers and hotdogs, grilled zuchinni
Tuesday: quesadillas, carrots
Wednesday: pasta alfredo with ham and spinach
Thursday: Seder Dinner w/ grilled chicken thighs, matzo ball soup, broccoli, etc
Friday: Mac&Cheese

How It Looks In the Beginning Isn’t What Counts

I know, that is not sexy food at all! But what is it? It is a crock pot full of pinto beans! Pinto beans are super easy to make! A key thing is to rinse and pick through you beans! Occasionally there is a rock and that doesn’t make tasty eats! Then I put beans and water in the crockpot at a ratio of 1:4. I usually make 4 cups of beans at a time. To that I add about 3 tablespoons of beef bullion, 1 tablespoon of pepper, 1/4 cup of dehydrated onions, a sprinkling of cumin and 1/2 tablespoon of kosher salt. Then turn the crock pot on low for 6+ hours.

Now I use dehydrated onions and only a sprinkling of cumin due to NerdDad’s  preference. If I was making them for someone else I would use 1 onion and 2 tablespoons of cumin;).

The first meal with my pinto beans is my Bean Bowls! I make up some seasoned Jasmine Rice in my rice maker and then put some of that in the bottom of the bowl. Then I add broccoli, beans, cheese and some taco sauce. Then stir!  And NerdDad is not a fan of the veggie meal so I usually add some cut up chicken or steak.

Looks a lot sexier now, doesn’t it;)?

Meal Plan Monday 4/11

Let me just say, I can not believe that it is April already!!! Is it just me or is this year flying by?

So here we are for another week and another 5 meals! I need to find some new meals to play with but until then!

Monday: Pork Roast in the crock pot, Green Beans, Buttery Rolls
Tuesday: Ham, Mashed Potatoes, Broccoli
Wednesday: Chicken and Rice Bowls with Spinach
Thursday: Spinach, Pork and Corn Enchiladas
Friday: Bacon Hash Brown Casserole, Scrambled Eggs

Ultimate Blog Party 2011

i dreamed i had insomnia. how silly, (and exhausting is that?)

i had gone to bed late, the time changed and i dreamed i had insomnia.

the bout had been upsetting/exciting/frustrating/exhausting. i was upset about something silly. and my nightmares(?) proved it.

but it was a new day. i had the best of intentions…

 

started off great…

 

 

i took care of the necessities (cat box, trash and laundry) remembering that there was a scrimmage tonight. i thought it was at 6.

the scrimmage organizing took a little more time than i had planned, and i was getting a little frustrated. i kept looking at my list wishing i had more checked off. i finally decided that in order to give everyone plenty of advance notice to cancel it at 4. (it was supposed to be at 7) i only had 2 confirmed yes…

checked several more off my list and was feeling pretty good. so i decided to make the casserole i had bought all the ingredients for and they were just sitting in my refrigerator.

 

back story:

 

i had gotten an email earlier in the week about the lunch on sunday being chicken divan. which included a recipe. it looked easy enough, but the recipe was a little vague. there was no measurement. and it called for cheese, but it didn’t mention what kind. i did my best at the market gathering what i thought i needed. (ok, i went to the store 3 times because i kept forgetting the soup)

 

ok back to the adventure:

 

turns out i gad gotten the wrong cheese and the recipe i got online require way to little cheese i decided to improvise. i figured since the recipe i had gotten intended for that. things went well, the chicken smelled nice.. broccoli was steaming.

viola!

 

 

i had most of the things on my list taken care of

 

 

until i heard a crack…

 

 

 

 

i found a solid piece of glass…

i’m not ashamed

 

 

 

 

guess i’m mopping the floor now
