Fried Zucchini

Yummy Fried ZucchiniFried Zucchini is a super easy and very yummy too! It is a great way to get your kids to eat more veggies. This, like many of my recipes, is more process than recipe.

Basic Ingredients:

Egg and milk: eggs lightly scrambled with just a splash of milk, I like to lightly salt and pepper this mixture too.

So seasoned bread crumbs are a must! While I am a huge panko bread crumb fan, this is not the right application for in it (at least not for me).

Zucchini cut into rounds. Yes, I am aware that a lot of people cut their zucchini in wedges but… I find that the kids can handle it better. From a cooking stand point, you are less likely to over cook the outside with rounds. You tend to have to cook thick wedges a bit longer to make sure that they are cooked all the way through.

Cooking oil: pick a low/no flavor oil like canola

Process:

First, wash and thoroughly dry your zucchini. Then cut it into rounds between 1/4 to 1/2 of an inch, depending on how cooked you like your zucchini (my kids don’t want any crisp;). Then drag your rounds through your egg and milk mixture. Then plop them right into your seasoned bread crumbs. You can see if your oil is hot enough by dropping a couple of bread crumbs and if they sizzle you are ready! Then drop your breaded rounds in your oil that is heated to medium high. Make sure that you flip them over and cook them until they are GBD (golden brown and delicious)! Then you will take the zucchini out and place it on a paper towel to dry, sprinkle with a little salt (I use sea salt) and sit for a couple of minutes. You do not want to eat these seconds out of the oil, you will burn yourself with steam!

Then enjoy!

(I listed this in Beauty and Bedlam’s Tasty Tuesday!)

Geeky Joy

So as some of you may know, I am in Breckenridge, Co for the Savvy Blogging Summit. But as with all journeys there is a beginning! Mine was in San Jose, Ca. And after I checked in I found a little geeky joy!

San Jose Airport waiting area chairs Not only did they have free wireless but every chair had plugs! On both sides! What computer nerd wouldn’t love that?

And just because I was flying out, here is a gratuitous picture of my plane I left on.

Mexican Hot Dogs

So I was making hot dogs for dinner when NerdDad was out of town. While the kids were very happy, I was a little disappointed because I wanted Mexican food but since NerdDad was out of town on NerdBug’s birthday… So I decided to do a bit of a Mexican dog! I had made some guacamole earlier in the day so I plopped that on there. Then I just added a crumbling of queso fresco.

Quite yummy!

Could Iran Have It Right?

Iran has banned the mullet. Yup, the mullet. In a funny way, I could get behind that. No one needs a mullet and in fact, many need to not have a mullet;).

In all seriousness I am not really supporting Iran. As hideous as I may think it is, it is still your right to wear your hair as you would choose. The reason Iran has banned it is only to ban part of Western Civilization. The Iranians should have the right to look as ridiculous as you might want.

Fabulous New Shoes

I needed new shoes for the summer (and the Savvy Blogging Summit) and I found these cute ones from Payless Shoes! I absolutely love the cork wedge on the black shoes and the cork heel on the brown!

I mean come on, aren’t these adorable? I also found out some great things about buying shoes from Payless Shoes. I had seen the black shoes a while ago but was waiting for a sale. By the time one came around there wasn’t any in my size! The cashier mentioned to me that if I ordered online and had it shipped to a store there wouldn’t be a shipping charge! She also mentioned that is I had it shipped to the store, I could try them on right there and get a refund if it they didn’t fit! How can you go wrong with that?

Thor’s Hammer

As many of you may know, June is a huge birthday month here in the NerdFamily! The challenge is that I have to keep coming up with cakes;). NerdBug turned 9 on the 30th and he loves all things super heroes or Star Wars. Since we had just given him a Thor comic book, NerdDad had the idea for me to make Thor’s Hammer!

What was the most challenging thing is that I thought I had black color but I didn’t. All you have to do is make a cake in a loaf pan. I added a touch of blue color into my white butter frosting.  Then I inserted a rolled brown bag with a handle loop into the bottom. To make the knob on the top I just frosted an Oreo and stuck a toothpick in the bottom of it. Then I shoved the toothpick into the top!

Pretty easy and he guessed right off what it was!

Friday Fun: Ballet and Hip-Hop Meet

The dance is only a couple of minutes and starts a little over a minute in. Alex Wong already was my favorite this season on So You Think You Can Dance and this just helped. I love the fact that he is a masculine ballet dancer. He shows both immense strength and grace. I also love Tabitha and Napoleon’s choreography! It is great to see this pairing! And check out how the judges gush;).
