A Little Dinner Out

So tonight we stopped at Red Robin in Turlock on the way home from the family Christmas celebration.
Did you know that they have a gluten free menu? I got a mushroom burger on a gluten free Udi’s bun. It was pretty good! I should have gotten mayo on it though;). I got the fries without the seasoning (the seasoning has gluten;). The strawberry daiquiri helped with the slightly dry bun;).

Gluten Free Donuts!!!

Light and fluffy!

Ok, donuts are a huge holiday tradition with us! We do donuts for Hanukkah and Christmas morning every year since NerdDad and I got married. I was afraid that going gluten free was going to be the death of such a beloved tradition. So I went in search of a gluten free recipe. The first one I tried was not good at all. These on the other hand were a big hit!!! I based it off of recipe I found over at Food.com but then made a few changes.

Ingredients:

2 eggs , beaten
2 cups buttermilk
1/4 cup butter, melted
1 cup sugar
1 teaspoon vanilla
5 cups home made gluten-free rice flour mix
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons salt
2 teaspoons xanthan gum
Powdered sugar for tossing (I think I used 1/2 cup)

Process:

Mix all the wet ingredients together and in a separate bowl mix the dry ingredients. Then fold them together (don’t use a mixer. Then let it sit for at least 15 minutes. I mixed them before dinner for Hanukkah and let them sit the whole time. Then heat up a pot of canola oil to medium heat.

I do a small test and when it immediately sizzles the oil should be ready. Then I use a small scoop (I think it is about a tablespoon of dough) and put a few scoops in the oil. Don’t over crowd the pot! It is about 3 minutes for each ball to cook. You may have to flip them to get them cooked evenly. I take the finished balls and place them on paper towels to drain while I put the next bunch in. Then put the drained donuts into your bowl of powdered sugar and roll (ok, really I do more of a bounce;).

And that is it! Fab donuts!!!!

A Refreshing Treat

I have a small Starbucks problem but I want to be a little healthier and a little frugaler. So I decided to start making my own blended drinks. I love the Rocket/single serving blender that I invested in. Considering that 1 blended drink ranges from $4-$5, it hasn’t taken long to make my money back.

I put in crushed ice, coffee (that was cold & leftover in the frig), left over creamer, a shot of chocolate sauce and blended. Then I topped it with low fat chocolate whipped cream. Delish! A cheap and easy way to replace my Starbucks frap!

Wrong? Does Iowa mean something?

I do not like admitting that I was wrong. It annoys me greatly. That is why I usually do not make big sweeping statement on my blog because then later I will feel the need to either corrected or apologize. But, alas, I may be wrong about the Iowa caucus.

I have to say the one thing I never contemplated happening happened. Who would have thought that Rick Santorum would have been inches away from winning? This may be a game changer! The reason there are so many Republicans in the race to begin with is due to the fact no one sees an option to Romney. If Santorum has a real chance of becoming the Republican nominee I think we may start seeing people drop like flies out of the primary race.

I am not sure that the Iowa caucus counted for anything but it just may have. We will only find out the next days or weeks to come. This could get interesting….

What I Wore Wednesday!


So I decided to start participating in What I Wore Wednesday! I figure that it will help keep me out of sweats. I like clothes but sometimes it is hard to justify wearing something cute to hang out around the house.

This week I am starting with an outfit I wore to church on Sunday. The shirt is from the Avenue and I got it for a steal. I think it was $10? The pants are by Caribbean Joe. The shoes are one of my favorite things and are by Strictly Comfort.

I realized that you can’t see my super cute blingy snowman earrings but next time I will take better pics!


Momma Go Round

Who cares about the Iowa caucus?

Before the results are in from the Iowa caucus, let us just put everything on the table. The Iowa caucus is unreliable and irrelevant. For heavens sake. Ron Paul, the candidate who said he does not even think he can win, is probably going to show up as the winner of the Republican Iowa caucus. I am really hoping that this time when the crazy candidate i.e. Ron Paul wins, it proves to the world that this is a waste to began with. I am not sure how it got so much prestige to begin with. I have heard that it was a pet project of the press back in the 80s but even that sounds too ridiculous to be true but, we are talking about the press so who knows.

So I for one am not even planning on tuning in to or reading about any of the coverage of the Iowa caucus. I will just wait till something more that counts happens.

(And no, I don’t think Paul is crazy but I think his chances are.)
