Quick and Easy Corned Beef Without the Cabbage

I am Irish! I love Corned Beef and Cabbage. But early in my marriage I realized that my husband doesn’t like cabbage or mustard. Both things that are essential to a good corned beef and cabbage meal. So I tweaked. I now have a great corned beef recipe that everyone will love, even those who hate corned beef. The first thing I did was toss the mustard seeds and the cabbage. You can make it in a crockpot or the oven. The key is seasoning it like a tri tip roast. Make sure that you put a little water in the pan, even if you are cooking it in the oven. Our favorite way is putting red potatoes and the corned beef into a baking dish. Then I just bake it at 350 degrees until it is done. This depend on size and temperature, ours is usually an hour to 1 1/2 hours. You could also put it in the crockpot for 3-4 hours on high and 6-8 hours on low. That is it! Corned Beef every one will love.

Hell’s Kitchen 3-5

So here we meet again for another interesting episode of Hell’s Kitchen. It is almost a catharsis to watch Ramsay loose it. It seems to calm me a bit;).

First off, Idol went 5 minutes into the show. It better not cut off on my Tivo before the end! I am stoked to see how Lacey being on the men’s team works out.

They got taken to an Asian Market. They have 25 minutes and $100 to get everything they need to make 3 Asian fusion dishes. The Red team seemed to form a plan but the Blue were running around a little crazy. The Red team seems to be getting a little sick of Andrea’s controlling ways. Then they had 1 hour to make the food. The editor in chief of Epicurious.com was helping judge this quick challenge with the winners being on the site. So the girls chicken dish was dry. Dry chicken kills me!!! The girls won over all!

The girls are getting an Asian day of surprises. The blue team gets to make fortune cookies and decorate the restaurant with origami. Lacey is ready to lose it. Lacey may have been the biggest punishment the guys will ever get. The girls got to see Jean Phillipe and Ramsay in the blow up sumo wrestler suits. It was hilarious! Apparently Lacey had the origami thing down and the red team got blasted doing a saki tasting.

I think if the girls can minimize the Colleen impact, they can dominate service. Paula’s tuna dish from the challenge made it onto the menu. Giovanni and LA both started off well with the appetizers. Lacey seems to be running the blue kitchen and it is all going well. Jay wasn’t on top of his Wellington but Andrea kept burning them and hiding them. When Ramsay found them he was mad. Ramsay made Robert mad by calling him Bobby. Then Ramsay found all the food Robert had been throwing away and Robert wouldn’t look him in the eye. Ramsay sends Robert out and then gives him a strong talking to. Robert goes from “I want to make you proud” to “Bleep you”. Andrea couldn’t seem figure out how long she needed and was just a mess. Then Jay was just blowing the meat. He forgot an order. Then red team sent out a raw dessert. Then as Jean Phillipe walks up with something else to bring back Ramsay just shut it all down.

As they line up Ramsay asks why Robert won’t look him in the eye and Robert said it was something he wanted to tell him in private. Giovanni and LA both were congratulated on how well they did and then they had to nominate 1 person each. Then Ramsay and Robert had a talk about how Ramsay calling him Bobby caused him to flash back to his bad father. Ramsay apologized and wished he would have told him earlier.

So LA nominated Andrea because of this service. Giovanni nominated Jay and Ramsay asked if someone else was close. Giovanni said Robert but he was a fraction better.

And then my Tivo stopped.

Both nominees made their pleas and thing Ramsay sent them back in line and called Colleen out. He said she had 5 bad services but she had fight. And thing he sent her home. I think that was totally the right call.

WFMW: Making the Most of Your Oven

So we collect all these great recipes but never make them because it takes for ever to cook them. Well the best invest I have made in my kitchen (short of my stand mixer) are 3/4 sheet pans with coordinating nonstick liners. Now that is the size that will just fit into my ovens. Full sheet pans were just about 1/2 inch to big.

Getting the biggest pans for your ovens is a blessing. I can cook a whole batch of chocolate cookies (30+) in 12 minutes. I also can make large batches of chocolate almond popcorn around the holidays. This just makes a better use of my time.

Then getting the matching liners saves even more time. Of course they are great because nothing sticks but it also cuts down on the washing. When I make cookies I don’t have to wash the sheet pans just the liners.

I will warn you that I couldn’t find these in a kitchen store (like LinensNThings, William Sonoma, etc) so I just went to a Restaurant Supply store. They aren’t fancy, just the rolled aluminum. Before you fret about them not being the AirBake, stoneware, etc remember this is what the professionals use.

So that is my tip for this week. Go cook and enjoy!

Hell’s Kitchen 2/26

I wonder how long Seth is going to make it because that team hates him. Also how did Colleen and Lacey even get on the show?

So Ramsay walks in and asks each team who the best are. Some of them are surprised when a couple say that they are. Why? If you have ever seen Ramsay, he only wants the people who think that they are the best.

Their challenge is to open for breakfast in 30 minutes. They are serving a bunch of kids. Each kitchen serves 50 kids and the first to serve them all wins. The red was serving the cheerleaders and the blue was serving the football players.

Colleen got into the cheerleading spirit by cheering instead of cooking. Koi said she would take pancakes because she isn’t good at breakfast. Pancakes??? That is something you want someone who is experienced to do. Seth seemed to have a hard time keeping up with the scrambled eggs. The girls finally won one!!! This puts an even bigger target on Seth’s back. The guys got to clean the dining room and both kitchens. Then they had to prep both kitchens for service that night. The girls get a day of pampering poolside. Before punishment the boys went back to the dorm and started fighting. Yea, that’ll help.

Then we get to service. The prep wasn’t finished when the girls got there. So when the orders came in the guys didn’t have the water seasoned or boiling for the appetizers. Now on the girls side, Koi tried to get ahead by dropping food early. Then the guys never got the girls’ sauced prepped so they had to wait. Andrea took control of the red kitchen and things started going out. It took the guys 2 attempts to get the red kitchen’s sauce done (Ben ruined the first one and Danny re-did it). Then the blue kitchen sent out salad with the butt of the lettuce (I call it the core;). Then Ben messed up the lamb. Colleen and LA are not getting along on the meat station. Danny had issues with the garnish and that was after he said he was the best. Nothing was really going well and Ramsay ended up losing it. There was no winner and both teams must nominate 2 people for nomination.

The guys nominated Seth and Ben. Lacey said the girls named Colleen and Lacey. So Ramsay asked her if there was anyone worse that night and she said Koi. Ramsay said that Ben rushed around to much but he was staying. In the end he sent Seth home. Then Ramsay moved Lacey over to the men’s team and they don’t seem happy.

This is going to start getting interesting!

Top Chef Finale Part 2 Recap!!!!

So here we are to find out who is going to win Top Chef. I am rooting for Carla but Stefan has a really good shot.

On a separate Top Chef note. I was watching this week’s Iron Chef America and Arianne was on as a sous chef.

So they start out having breakfast on the Creole Queen paddleboat. Then they go meet Padma and Tom at the New Orleans Collection. The challenge is to create a 3 course tasting menu. It is going to be served head to head and they don’t have to do dessert. They have 2 hours of prep the first day and then 3 hours to cook day of. They brought in Richard, Casey and Marcel from the previous seasons to serve as sous chefs. They had to pull knives to choose sous chefs. Carla got to pull the first knife because she won the last challenge. I would have thought she would have gotten to choose first. Hosea got Richard, Stefan got Marcel, and Carla got Casey.

Then Stefan and Hosea were fighting over foigras. Casey suggests that Carla suvee the sirloin, which she has never done before. Hosea realizes that Casey is throwing in her influence. But I notice he didn’t bother asking Richard for any suggestions.

So day of they find Tom at the restuarant they are cooking at. He is standing in front of an aligator. I am calling a new course. They have to make and appetizer for a tray pass. They will use alligator, crab or red fish. They will use the King Cake to choose. It is a cake that has a prize in it and who ever the prize gets to choose everyone’s protein. Hosea got it. He chose red fish for himself, gave Carla the crab and gave Stefan the alligator.

Stefan is making an alligator soup to pass? What? Now Carla is doing a soup but it is a bite in a Asian spoon. Maybe Stefan is doing the same basic thing. Hosea is not making a dessert because he isn’t good at it and doesn’t want it to be the last thing he serves. Stefan is freezing the fish so he can slice it thin. Marcel doesn’t like that idea but I don’t think he said anything. I think Carla shouldn’t let Casey talk her out of the tart and into the souffle. Carla and pastry are good. Carla ruined the souffle because she forgot to turn the oven down. I thnk that is the end for Carla.

Serving and Judging:

John Besh is one of the guests!!! Fabio is also a guest. Hosea’s passed app seemed to go over well. Stefan served his alligator soup in a little mug. Both Stefan and Carla’s dishes seemed to go well. Then we go onto the plated food. Carla’s fish went well. Hosea’s didn’t do well. He didn’t add enough salt. Stefan turned his fish a bit watery because he froze it. They also thought Stefan’s was a bit bland. Then onto 2nd course. Carla’s steak didn’t go well. Stefan’s went really well. Gail loved Hosea’s dish. Someone thought Stefan’s dessert was the best. Gail thought it was outdated and Tom thought it was eh. Fabio thought that Hosea closed the meal better. Someone else thought that Hosea should have finished with a dessert and that he took the safe way out. Between the steak and dessert, I am pretty sure Carla is out. Since Stefan’s dessert didn’t impress Gail or Tom, I am afraid that Hosea is goign to win this one.

Now onto Judging Table. Tobey thought that Carla’s meat wasn’t her and wasn’t that good. Tom said she let Casey talk out of her out of making the food that got her to the finale. Tobey said that Hosea didn’t add enough citrus to his sashimi. They all liked his 2nd course. They all liked the venison but seemed to be dissapointed about dessert. They thought that Stefan’s fish was watery and bland. They all liked his squab and thought it was the best of the night. When they asked why they should be top chef, Carla cried a little and said when she makes her food she is a top chef. Stefan also started crying for Carla. As soon as deliberation started they said that Carla was out. That just makes me sad, my heart hurts for her. They all think that Stefan’s dessert was pedestrian. Hosea’s procession was good. Tobey really was hung up of the fact that Hosea’s meal didn’t have an ending. They thought that Stefan’s missed soul though he had precision. Tobey said that if you are giving it for soul, give it to Carla. I second that. I feel Carla is the Top Chef here!!!!! But unfortunately Hosea won:(.

I don’t think that Stefan wouldn’t be the easiest to get a long with but he is consistantly good. Sometimes you can afford a huge ego because you really are that good. Hosea, I think, sucks. As both a person and a chef. Carla has the most heart but wasn’t consistent and I believe in constistancy. I think in all fairness Stefan should have won not Hosea at all!!!

Hell’s Kitchen 2/19

Here we meet again for an anger packed episode of Hell’s Kitchen. Lets see how it all goes!

I think the girls are really at a disadvantage since Ji had to quick over her foot. I wonder if they can pull it together this week.

So they off on an unknown field trip and Scott asks if anyone has a heart condition and tells them to grab a barf bag. They are in a meat processing plant. It is pretty obvious that they are going to have to break them down because Scott tells them where everything is on a side of beef. They get back to Ramsay who has big fake cows and a bunch of cuts of meat. First challenge is identifying what type of cut and the second is where it comes from. Basically a person came up and put the cut name on the meat. Then you found out how many (not which ones) were wrong and then the next person tried. Then ones all the cuts were identified they moved onto labeling the cow. The guys ended up winning and Lacey really messed it up and took a while to do it. It was obviously that Lacey was moving labels just to be doing something. Maybe if she would have quit then someone else could have done it.

The guys got to go wine tasting and out to dinner. The girls got to butcher whole sides of beef (duh). These girls are ridiculous. One said it was like a scene out of the Godfalther, please. Then Ramsay arranged for a tasting for the girls of all the ickier parts of the cow. Let the puking begin!

Ramsay said that Hell’s Kitchen will be a steak house (once again duh). The twist is there will be 2 seatings with 1 team cooking while the other team serves. The men chose to cook first. Each team get 2 hours to serve as many as possible.

Now the girls were a little mean to the guys because it took 20 minutes to get the first order in. But that didn’t seem to help. The guys got a bit in the weeds with the salads. Ben sent out 6 desserts before the first appitizer went out. Then they are rushing the steaks so that they are sending out basically raw steaks. It is really going to bite Giovanni because he runs a steak house. Then the guys run out of filet so Ramsay sent Seth over to cut some more. Seth had no idea how to clean a tenderloin so he just hacked the thing. It didn’t help that he tried to hide the waste and Ramsay dragged it out and made a huge deal about it. Ramsay ended up closing down the blue kitchen.

Then it was the girls’ turn. Charlie was the one who messed up the salads wasn’t doing much better in the dining room. He asked another guy to go see if he took someone’s order. Colleen couldn’t remember how many and what kind of salads were needed. But salads did go out with so of the shrimp being partially raw. Back in the dining room Charlie is dumping bacon everywhere on a table. Andrea seemed to be rocking out the steaks but the guys kept bringing back steaks. But Ramsay decided that many of them were perfectly done.

The women didn’t quite finish but it seemed Ramsay called it right at 2 hours where as the guys had more time. Charlie was the worst waiter and Lacey was the worst waitress. The women served the most entrees. So the guys had to come up with 2 people to nominate. Seth was honest that he wanted to pick the best to go.

Ramsay asked Jay who the nominees were. The nominees ended up being Seth, because he doesn’t have the experience, and Charlie because of his execution issues. Then Seth wanted to go down the line and see if everyone agreed. Ramsay wasn’t having any of it. Seth went on and on about why he should stay. In the end Ramsay sent home Charlie.

I agree! Charlie claimed how he had more experience but if so why has he been in the bottom so much? Seth may not have as much experience but that means maybe with a little knowledge he might have done better. Where as Charlie had the knowledge and didn’t do it. Ramsay also said that Charlie was a prep chef and that isn’t what Ramsay needs.

The next episode looks like it will be very interestig so I will see you all next week.

Top Chef Finale Part 1 Recap

First off, Leah’s gone!! So would Fabio’s hair be considered a Mohawk? I love Carla’s hair straight. Emeril owns 10 restaurants? Oh my!

Quickfire:

The chefs competing in the quickfire are Jeff, Jamie and Leah. The winner joins the finalists in the elimination challenge. They will each have 1 hour to make a dish with crayfish. Leah says she has never cooked with crayfish. Did she not know that she was going to New Orleans?!?!?! That is one of the most quintessential New Orleans’ ingredients. Leah is making a gumbo she has never made. Jeff is making crayfish and shrimp. Jamie is making an actual original dish with some sort of corn cake with an egg and crayfish. I hope Jamie wins!!!!

Jeff won. He just seems so pretentious. In order to make it to the finale Jeff must win the elimination challenge.

They all are going to Emeril’s Delmonico restaurant. I hope everyone pays attention because the dinner often comes into play for the elimination challenge.

Elimination Challenge:

They will have to creat 2 dishes and 1 cocktail each for a masquerade ball that they will cater for 100 people. 1 dish must be a creole dish. The winner of the challenge will also get a car. Shockingly it is a Toyota and not a Saturn.

Jeff is making his own sausage. Carla is having a dickens of a time to shuck her oysters. Stefan is just screwing off. I wonder if it is going to bite him. Fabio was smart studing flavor profiles before he came. I agree with Tom that Carla should have steamed her oysters because they are going into a stew anyway. Carla gets there at the site and only has a third of them shucked.
They are given a bartender to help them but Fabio wants to mix it himself. I don’t know if he is but he wants to. Hosea forgot ustensils to serve the gumbo (and a whisk).

Hosea’s Menu: Duck, Andouille and Chicken Gumbo, Pecan-Crusted Catfish, Hurricane with Grand Marnier and Rum

Fabio’s Menu: Sausage and Rabbit Maque Choux with Grits, Crawfish and Crab Stew with Caserecci Pasta, Muffuletta Bread, Bell Pepper Martini

Stefan’s Menu: Duck and Rabbit Gumbo with Grits, Apple Beignet, Black Cherry and Rum Cocktail

Serving and Judging:

No Tobey, Gail is back!!! They liked Jeff’s Cucumber Mojito. Fabio didn’t have enough heat in his food. They liked Stefan’s gumbo but the roux wasn’t dark enough. Carla used Emeril’s seasoning. They loved Carla’s food! Hosea studied up on the food and he did a real authentic gumbo.

So back at the Judging table Tom commended Jeff on making his own sausage and Jeff said he couldn’t win if he just stole someone else’s sausage and didn’t make his own. Burn!!! I think at least Hosea and Stefan used premade sausage. There was some dissing on Fabio’s food for not spicy enough and the drink was to sweet. Stefan got hit for not deep enough roux and Tom thought he was just a little to clam in the kitchen. When they got to Carla they asked her what they thought. She thought she might have had to much bay in the stew and both Tom and Emeril told her there was nothing wrong with that stew at all. You go girl! (It is obvious I want her to win;) Emeril even liked her non alcoholic cocktail. Gail loved her beignet and Emeril loved that they were fresh. They really liked Hosea’s roux and his gumbo.

According to the judges there was a clear winner and it was Carla!!! I feel bad for Jeff because I don’t think he lost but since he didn’t win he can’t go on. In the end Fabio was the other chef eliminated.

So who will be Top Chef? I think and hope it will be Carla!!! Join me next time to see!!!!

Top Chef Recap 2/11/09

I still can’t believe that Jamie was kicked off! What is Leah still doing here?!?!? Well, lets see if we can get rid of her this week.

Quickfire Challenge:

Wylie Dufresne!!! This guy totally rocks! Science and food, my favorites. Eggs are the basis for this challenge. They have to just create a dish with eggs. The bottom was Fabio because he danced around the idea of eggs, Hosea because his 3 dishes didn’t flow, Leah because she had a heavy potato ravioli. The top was Carla because of her playfulness and Stefan because of his technique. The winner was Carla with her green eggs and ham!

Elimination Challenge:

They had to draw knives with chef’s names. They are making a “last meal” for these superstars of the culinary world. They even are providing our cheftestants with a basic menu. Carla was allowed to trade since she won but she didn’t want to. So to make things interesting, Fabio bent his finger back and broke it while he was cooking. Now it was just his little one but ouch! 10 minutes before service starts Tom comes back and says not to embarass him. Leah thinks that her Hollandais isn’t quite right but she was going to thin it out.

Service and Judging:

Leah went first. Wylie thought that the egg white was to runny. Samuelsson thought her textures were off. Then Stefan was up. Samuelsson and Wylie thought that the salmon was overcooked. Susan said she wouldn’t have noticed that he did 2 kinds of spinach if he hadn’t said. Then Hosea is up. They seemed a bit dissapointed with it over all. Then Fabio served. I have to say that I am impressed that he kept his injured hand behind his back all the tim. He did a good job and seemed to be the first one to impress anyone. That was with the chicken. Unfortunately the salad wasn’t as big a hit. Then Carla was up. Susan really liked Carla’s dish. Marcus though it was over cooked but Lidia thought it was perfect. So it looks like Fabio, Leah or Carla will win.

So they call everyone at once to the judges table. Jacques Pepin is representing all the chefs as guest judge. Leah’s eggs needed to be cooked and her Hollandaise was to thin. They thought Stefan’s salmon was overcooked and with cream on both the fish and the salmon it was to much. Hosea’s shrimp just wasn’t what she had been looking for and his tomato should have been seared. Hosea said he didn’t want to put out ugly food and Pepin said he should have gone for taste. Fabio’s chicken was a hit. But the salad looked like an airplane salad. Carla said her breats were overcooked but Pepin said by taste you wouldn’t have known. They also liked the peas and were shocked that fresh peas were that good at that point in the season.

Do they know at this point that Fabio broke his finger? It is never mentioned. They say that the top 2 were the squab and the chicken. As they deliberate it is mentioned that Fabio’s finger is broken. The winner was Fabio! He won a bottle of wine and a trip to Napa. Then we came to the bottom 3 of Leah, Hosea and Stefan. Leah is out!!!

So our final 4 going to New Orleans are Hosea, Stefan, Fabio and Carla. I am a little dissapointed the Emeril is going to be the guest judge. I personally think John Besch would have been a better choice.
