Hamantaschen Recipe

Hamantaschen is a traditional cookie for Purim. It is a 3 corner cookie that traditionally represents Haman’s hat. When I make Hamantaschen they have always been the traditional cookie with Mohn (poppyseed) filing. It is a process because you make the dough, the filing and then assemble.

Cookie Dough
Ingredients:
2 cups ap flour
1 teaspoon baking soda
1 pinch of salt
1/2 cup sugar
8 tablespoons (1 stick) butter, cut up
2 eggs, beaten
1 tablespoon grated lemon zest

Process:
Sift the dry ingredients (including sugar) together. Work the butter into the dry ingredients with a pastry blender or forks. Then add in the eggs 1 at a time and mix with the pastry blender. Then blend in the lemon peel. Form the dough into a ball, wrap it in parchment paper or plastic wrap and refrigerate for 1 hour.

Filling
Ingredients:

1 cup poppy seeds
1/2 cup honey
1/2 cup milk
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1/2 cup raisins
Process:
Combine the poppy seeds, honey, and milk in a saucepan. Simmer for 10 minutes, stir constantly, and the mixture should thicken. Take off the flame and mix in lemon juice, zest and raisins. Let cool.
Assembly
Ingredients:
dough
filling
1 egg, beaten with 1 tablespoon of water
Process:
Divide dough into manageable portions and roll out between 2 pieces of parchment paper until it is between 1/8 to 1/4 inch thick. Then cut the dough out into about 3 inch circles (I use the top of a glass). Then place a teaspoon on filling in the middle. Then pinch the dough around the filling to form a triangular shape. Then brush with egg wash (do this when all of them are formed;). Place on a baking sheet and bake at 350 degrees for 15-20 minutes or until golden brown.
(If I make them for this Purim I will post a picture on this post)

Bargain Peanut Butter Cookies

I love peanut butter cookies with chocolate in the middle. But that chocolate is pricey! So for years I have always bought Hershey Kisses on holiday clearance. No one can taste the price difference.

But I have been faced with a problem. Hershey Kisses are getting harder and harder to find on clearance. At least the normal flavors that my husband will eat (he just won’t do things like raspberry filled;). So in the after Christmas sales I decided to branch out. These are the Butterfinger bells that I found on a huge clearance and then used a Walgreens coupon on;). So I paid less than a dollar for a bag.
But I was hesitant to make them for other people because I thought it would look to much like Christmas and Butterfingers aren’t traditional. Well, I don’t care anymore. These were super yummy!!! And, frankly, I think they look great for any time of the year!
So the lesson: Buy that clearance candy! Use it in your cookies and where people will see it! You will save $$ and come up with a new, great tasting combo!

Healthcare Summit Sink Hole?

From everything I hear about yesterday’s Health Care Summit it was boring. I mean really boring. I have only read a couple of pieces but I saw a lot of Twitter statuses fly by. Suffice it to say, not much was actually done and those who were there should receive an award for not going postal (I am talking about all you press, not the government types;).

But was there really anything done? Well, in the way of getting something passed or passable. No, not really. But I think in the net gain the Republicans/people against Obama’s bill did well. From the Tweets and the some of the articles it seems that the Republicans were able to really show some of the holes in the health care bill. Now I am not saying that America no longer wants any health care relief (though I think the Fed’s should just butt out completely) but I do think they don’t want what has been put forth already. I also think the American people realize that the people in the Summit may not be the people to design anything in this realm at all.
I am curious to see what happens next but on the whole I think we are going to sink more time and effort into discussing the Health care issues than actually doing anything about it. So just stop now and hand control over to the people. And I mean all the control. Like portable insurance and an honest to goodness free market.

Lunch Combo Meals

Usually lunches around here consist of the ever imaginative peanut butter and jelly. But 1 afternoon, I think I was out of bread, I just threw a bunch of things on the plate. My kids loved it. My guide is a little protein, fruit, veggie and carbohydrate. Here I have our most popular mix. It is baby carrots (with either ketchup or ranch), apple, pastrami lunch meat, havarti cheese, and naan.

One of the fun aspects of this type of thing is that the kids can really help. One can count out the carrots, one can use a kid’s knife
to cut the apple. One can even use scissors to cut the lunch meat or the naan. The kids are also more likely to eat whatever is on the plate because they helped. So this is a great time to try a new food!
For me this accomplishes 2 main goals. It cleans out the frig and gets lunch on the table quick!

Potato Mashers and Kids

Potato mashers and kids may seem like an odd combination but they are a match made in heaven.

I have been wanting to get my kids into the kitchen with me more. And I don’t mean in the teaching way but a way that might actually help. Well, it appears all I needed was to be making recipes that need a potato masher!
Monday I got my 6 year old in the kitchen and she had a ball! First, we made guacamole. I cut them open, took out the pits and showed her how to scoop out the meat with a big spoon. Then she mashed! And mashed! Then I took the masher from her, sprinkled in the mix and handed her a spoon (yes, I said mix;). Then we made banana bread. I had 2 hands of bananas that were perfectly dark brown! So I dumped them into 2 big bowls and she mashed them all up for me while I did dishes!
This was a great success! If you are looking for a way to get your kid into the kitchen try a recipe that needs something mashed!

Bacon Wrapped Tri Tip

Ok so the wrapping wasn’t perfect but it tasted great!!! And it was so easy to do!

I just got an unseasoned trip-tip. I rubbed it with Pappy’s seasoning. Then I wrapped it in thick cut bacon. I placed it on a cooking sheet (with a silicon liner). I then inserted a thermometer into the thickest part of the meat (it is on an alarm) and set it to Medium Rare. Then I roasted it in a 375 degree oven. Take it out and then let it rest 15 minutes. Then slice it up!
Everything is better with bacon!

And We Have Hair Do’s!!!!

You know how there are some little girls that look so cute on Sunday (or any) mornings? Their hair is perfectly done with just the cutest styles? Well, I missed the mommy gene that gives me the natural ability to do my little girls’ hair. Frankly, I really can’t do my own;). I was afraid that it would take for ever and would just lead to huge fights but I was tired of them always looking like little ragamuffins.

So you can imagine how excited I was to find a website that could walk me through step by step a cute hairstyle for my girls! Babes in Hairland had this cute up do so I collected my water bottle, comb, and rubber bands and then set to it!

As you can tell, I did both of them basically the same. It isn’t quite a cute as the website’s but the girls’ are cute so that works. It is also so much better than how their hair is normally done;). I have yet to try any of their other hairstyles (like even a French Braid) but I am going to bask in this one just a little longer! It is the little things, right?
